The popcorn chicken bites came fully cooked, but frozen. We thawed them out before combining them with the buffalo sauce. I think for next time, it would be better to crisp up the breaded chicken in the toaster oven prior to stuffalo-ing them.

Looks great! Were the perdue pop corn chicken cooked prior to being put into the crust or did they cook while in it? I’m curious because I wouldnt want to over cook them.

Ok, something must be in the air. My friends and I were in the Poconos this weekend and also made a Stuffalo… yes, we too called it the Stuffalo, so I’m not sure if there is some sort of trademarking thing we need to look into… :) We went for a white pizza with shredded chicken inside the crust. My friend Daniel is going to be guest blogging about it on kitchenplay this week. We should compare notes.

Just saw this over at Serious Eats. I’m going to try this for my 14 year old son. I will be trying the breast stuffing, mixed with a bit of blue cheese and mozzarella cheese and for me, a CNYer, the sauce has to Frank’s Red Hot. Thanks for the idea guys!
