More on David Katz’s Mémé

We first told you about David Katz's upcoming Mémé (and its killer Ralph Steadman logo) here and here.

Now, we have even more info to share. Jump please.

- Concept of the liquor-licensed restaurant, located in the former Melograno (2201 Spruce St.) — "new American [and] a good bit rustic." Cherry wood tables and a minimalist design aesthetic inside; additional seating outside when it's nice.

- Katz's menu will feature three categories — "small-ish" (apps), "larg-er" ($15-$25) and "for-2" (you get it) are the working names. The chef says the following items will definitely be on his fall menu (come winter, he says, things will get heartier with the addition of multiple rustic meat dishes):

  • Beef tartare, salty potato chips, quail egg
  • Chilled shellfish: oysters, little neck clams, salt-baked shrimp
  • Foie gras and sweet onion tart, golden apples, maple-sherry glaze
  • Sautéed skate, 8-hour tomatoes, tapenade, caper brown butter
  • Grilled rosemary flat breads, pears, gorgonzola dolce, prosciutto
  • Skirt steak, oxtail-mushroom marmalade, braised shallots, beef jus
  • Slow-roasted lamb shoulder, ratatouille, potatoes, black pepper lamb jus
  • St-Canut pork (this pig comes from Mirabel, Quebec and has a cultlike following; Katz will offer it on weekends)

- There'll be a 36-bottle wine list (mostly estate bottled) and a "not beer geeky" beer list — winners like La Fin du Monde, Sam Smith Nut Brown Ale and Ommegang Hennepin will be on offer.

- "I'm opening a place that I'd be able to eat at three times a week, with no pretense or kitchen faux hawks involved," he says. "[And] the music will be heard in this joint — no ambient smooth jazz." We've been hunting for the elusive faux hawk-less, progressive-house-free new American restaurant for what seems like an eternity. You are doing God's work, sir.
