Food Network just sent over this shot of Philly's Jose Garces in action against Bobby Flay on Iron Chef America. Any aspiring Otas out there who want to try and identify what our dude is whipping together? Speak up in the comments. Please preface all guesses with a rousing "Fukui-san!"

Fukui-san, that’s not endive in his hands, is it?
Fukuki-san, no, I think that’s melon of some sort - see the larger piece in the lower left-hand corner of the screen?
Fukui-san, or more accurately, Alton, that looks like honeydew melon in his hands. Now, would someone be so kind as to help me? Who is the completely gorgeous sous chef who assisted Chef Garces during this episode? He had a shaved head. I want to know who he is!
