Jose Garces to open Chifa at 707 Chestnut

FINALLY got the OK to mention that Jose Garces is taking over 707 Chestnut St. with an Asian and Latin-style restaurant named Chifa. It's gonna feature a ceviche bar with displays. "I plan to spend a good amount of time at the ceviche bar, creating unusual and fresh combinations with ingredients from China and South America," says the chef/restaurateur. The spot will open in 2009.

But what's Chifa? It's the term for a convergence of Peruvian and Cantonese cuisine. Chinese immigrants from the province of Guandong helped it spread to South America. Major dishes include wonton soup, fried rice (arroz chaufa) or noodles and stir-fried stuff.

Jose : great idea to have a CHIFA in Philadelphia. I love chifas in Peru. Fantastic cantonese food blended with the world famous peruvian cuisine.
I had a fantastic CAM-LU WONTON, so popular in Lima. Just came back from peru couple of weeks ago. Basically it is a mountain of fried wonton topped with chinese vegetables in a sweet and sour sauce ( tamarind?) and slices of roasted pork or duck.
The food at the CHIFAS is outstanding .
I love ceviches and chifas and will be at your restaurant as soon as it opens. When?? is the expected grand opening?
