At this second annual celebration of all things bubbly, a huge variety of sparkling wines and Champagnes, paired with eats, will be flowing in the opulent Grand Ballroom of the Hyatt. Drinks will come courtesy of importers like J. Maki Winery, Nationwide Wine & Spirits and Terranova, who'll provide everything from Blanc de Blancs and Prosecco to sparkling reds and ice wines; local restaurants like Bibou, Café Apamate and Cantina Dos Segundos are providing eats. Tickets can be purchased online (buy two and save $20) or at the door (cash only); proceeds benefit the Neonatal Intensive Care Unit at Thomas Jefferson Hospital. Victory Brewing co. Beer Dinner at Chifa

Chef Jose Garces' Chifa and Downingtown's Victory are joining delicious forces for tonight's beer dinner. Chifa will put out five courses of Peruvian/Cantonese fare — hiramasa and octopus ceviches; grilled Thai sausage with chile sauce and rice; a smoked ribeye main; and coconut tapioca for dessert. Victory founder/brewmaster Bill Covaleski will be on the scene to discuss his hand-picked beers for the meal, which include Prima Pils, Wild Devil, Golden Monkey, Baltic Thunder and the brand-new double IPA Yakima Twilight. 2009 Philadelphia Whiskey Festival

Philly Mag is hosting this brown booze lover's dream at the Union League. Sample varieties of scotch, bourbon, cognac and whiskey (and even tequila, gin, rum and vodka) from purveyors as diverse as Blanton's, Chivas, Dalwhinnie, Famous Grouse, Macallan and Michael Collins. Industry representatives and specialists will be on the floor to field your questions, so come curious. There'll be food and cigars, too. Discounted rate at the door for designated drivers. Moët & Chandon Sushi Pairing Dinner at Roy's
Tue., Nov. 10, 6-9 p.m., $75

Roy's is exploring the pairability of sushi and bubbly with this tasting. Start off with an amuse bouche of seared salmon nigiri paired with a "POG" cocktail, which mixes passion fruit, orange and guava into a mimosa-type situation. Follow that up with Hokkaido scallop sashimi paired with M&C Impérial and snapper carpaccio paired with Grand Vintage 2000, then move on to the main, a Wagyu beef tataki-inspired Lakanilau "roll" paired with Rosé Impérial. Wines of Chile at Legal Sea Foods
Oct. 19-Nov. 14, varying prices

Through mid-November, Legal Sea Foods is working with Wines of Chile, a promotional body that represents 77 Chilean wineries, to showcase the best vinos the South American country has to offer. Featured wines are pouring to complement special menu items from Legal. These wines represent a great value, too, as most cost less than $10 a glass and $40 a bottle.
