1 The Classic Appletini

Get set for some lip smacking with this by-the-book version of the appletini. To complement the sour apple schnapps, the Continental adds lime juice, pours in the vodka and shakes before bringing it home in a chilled martini glass garnished with a cherry.

2 Garbanzo

Don't let the quirky name fool you — this martini is much more fruit than bean. Absolut pear vodka, pineapple juice, triple sec and lime juice team up for this painfully sweet, light green concoction that's shaken and served with a lime wedge.

3 Cucumber Zest
Fuji Mountain Restaurant, 2030 Chestnut St., 215-751-0939

Cucumbers suffer a violent end — chopped in half and muddled down to drinkable form — to produce the titular zest for this cocktail. It's light and refreshing when mixed with Hendrick's gin, lemon and lime juices and topped off with simple syrup. Fuji servers suggest ordering the drink with dinner, as its fresh ingredients complement sushi.

4 Bad Education

Named, like all of Amada's specialty drinks, after a Pedro Almodóvar film, this new spring cocktail is a mixture of muddled thyme, fresh-squeezed lime juice, elderflower liquor and rum. Double-strained to preserve the aromatic thyme flavor and pale green tint without any troublesome floating leaves, it's served on the rocks with a splash of soda and garnished with thyme.

5 Kiwi Margarita
Las Margaritas, 2538 Welsh Road, 215-969-6600

Kiwi gets muddled to the beat of a mariachi band for this take on the traditional 'rita. Two parts Cuervo, equal parts triple sec and Grand Marnier, lime and salt make it Mexican, with just enough sweetness to make you wish you'd packed a sombrero.
