While many of us are not yet ready to say goodbye to summer, Gene Giuffi and the folks at Cochon (801 E. Passyunk Ave.) are more than ready for fall. They've rolled out an autumn menu full of hearty summer-fall crossovers like braised escargots with shiitakes, pancetta, tomatoes and an herb garlic sauce, pig cheek cassoulet with Swiss chard and white bean and bacon ragout and fried frogs legs with pickled tomato salad and roasted pepper emulsion. And although we'd be plenty happy to subsist on tomatoes, corn and char grilled burgers all year long, Giuffi's pork chop with smoked prosciutto mashed potatoes, charred brussels sprouts and Reggiano sauce is making us think that the fall isn't going to be all that bad after all.
